It’s officially spring! Time for light recipes, Easter, gardening, and allergy pills. I was inspired to experiment in the kitchen today when I saw a bag of frozen mango sitting in our freezer and a bunch of avocados starting to go bad. The result was a million times better than I expected!
My Take on a Mango Avocado Salad:
2 mangos cubed ~ 2 avocados cubed ~ 2 T. Olive Oil ~ 2 T. Balsamic ~ 1/4 C. Whole Wheat Crutons ~Red Onion (optional)
Directions: Lightly toss ingredients- add crutons last
This recipe is so simple and light and the crutons give it such a nice crunch! I hope everyone has a fantastic Saturday:)
