I love when you find something that you can cook without a recipe. It makes me feel like Julia Child or my grandmother, who can whip up a fantastic dinner out of even the most meager pantry foods while never once glancing at a recipe card. So far, only a few real dinners fall under that category for me- roast chicken, spaghetti, chicken burgers, broiled fish, and the like. Oh, and this new delectable. Huge, filling, and healthy stuffed peppers that are easy as pie. Only a whole lot easier.;)
Healthy Stuffed Peppers:
4 organic whole bell peppers~1 lb lean ground turkey~1 cup cooked brown rice~onion~can of low sodium organic tomatoes~1 T. cumin~2 T. Worcestershire Sauce~1 tsp. garlic powder~ 1 cup Greek Yogurt~1/2 cup shredded Light Mexican Blend Cheese, Pepper to taste
Diced carrots (optional), Bragg’s for taste (optional) Salsa (optional)
*Preheat oven to 350 degrees*
1.) Gently saute onions and carrots (if using).
2.) Add in turkey, cumin, garlic powder, pepper, and Worcestershire sauce. Cook until no longer pink.
3.) Stir in can of tomatoes and rice and leave on low while prepping peppers
4.) Wash and cut peppers lengthwise, remove seeds
5.) Fill cavities with mixture and cook for 20 min.
6.) Pull peppers out, add cheese to each and return to oven for a minute until cheese melts.
7.) Serve with greek yogurt topping and salsa
