Crockpot Sweet Potato Chili

Oh summer…now that you are finally  here…

I’m craving recipes from the fall:)

I have been playing around with more vegetarian dinner recipes that the family approves of,  and have found success in this form:

Crockpot Sweet Potato Chili (Vegan/GF)


The base: 2 15 oz. cans no salt added tomatoes (best organic!)

3 cups water or low sodium vegetable broth

The fillings: green bell pepper cut in chunks

2 large sweet potatoes cut in cubes 1-2 inches

1 can no salt added black beans

1 can no salt added kidney (or any other!) bean

1 large chopped onion

2 cloves minced garlic

The fun stuff: 1-2 T. chili powder

1 T. cumin

1 tsp. cayenne pepper

1 tsp. garlic powder

1 tsp. nutmeg

salt/pepper to taste


Wait for it…

combine all ingredients in crockpot and cook on low at least 5 hours.

 How I love crockpots:)

This recipe was so delicious and simple, with the nutmeg and sweet potato flavors really shining through. The chili is so chock full of vegetables that you don’t even miss the meat!
