Another holiday, another great time to get together with family and friends, and another great opportunity for blog pics! Our lunch spread was filled with interesting but amazing pairings that all worked so well together. We started with a heirloom tomato, balsamic, and brie salad using TJ Balsamic Glaze, which was so delicious!
Next up was a chopped baby greens simple salad with avocado. Basically an excuse to eat more avocado:)
We had planned on having a quinoa salad and a barley salad as the main dishes, but the dads were craving pizza (man food). Not one to get Domino’s, I mentioned picking up a pie at a new place called Pizza Fusion that uses organic ingredients and even tries to source locally. We got the Spinach and Artichoke and the Farmer’s Market pizza, which had plenty of roasted vegetables (my favorite!) on them. The organic multi-grain crust was just the right thickness and had a great texture. I hadn’t had pizza in ages, so they were extra wonderful in all their cheesy goodness;)
I highly recommend this place, and can’t wait to try their other options. They even have vegan pizza!
Finally, we finished with a Summer Watermelon Salad, which has been a huge hit in our family lately. It’s perfect for the summer and so refreshing. Don’t be scared to try this one, all the flavors work amazing together!
Summer Watermelon Salad
Watermelon, chopped into cubes
1/4 cup feta
Juice of 3 limes
Crushed mint leaves
Combine all ingredients except for feta, cover, and let sit in the fridge for at least an hour. Before serving, add feta.
Overall, we had an amazing day and I hope all of you did, too! The best part? There are tupperwares full of leftovers in the fridge for tomorrow- if they survive until then!:)
