My Vitamix is definitely getting in shape! I generally take very good care of it, although the other day I blended up a penny while making almondmilk. Apparently my mom had taken our giant bag of almonds in her car on her way to work and accidentally dropped a few coins in the bag since it was right next to her loose change. If it hadn’t been so loud banging around in there I probably wouldn’t have even noticed! That’s when you know you have a good blender. Anyways, I know, yet another green smoothie recipe, but I don’t think I’ll ever tire of them! Especially now that it’s summer, they are so refreshing and I love getting creative and coming up with new versions. This one is definitely a keeper! I first made it just a zucchini bread smoothie, but the cocoa powder is essential to making it epic:)
This past week we were given
some a load of huge squashes and zucchinis. Even with adding them to lunches and dinners all week and having grilled zucchini galore, we still had another left! What to do? Throw it in the VitaMix of course!
Chocolate Zucchini Bread Green Smoothie
1 large frozen banana
1 cup packed green leafy vegetable (I mixed spinach and kale)
1/2 zucchini, chopped roughly
1 1/3 cup almondmilk
1 scoop chocolate protein powder or 2 T. dark cocoa powder
2 T. flax seed or oil
Boosts: (chia seed, bee pollen, spirulina, maca, etc.)
Blend until smooth, sip, and savor guilelessly. Let’s face it, real zucchini bread is pretty much an excuse to eat more bread and not feel bad about it 🙂
By the way, this recipe made more than is shown in the glass…actually, serving my smoothies in salad bowls has become the norm!;) At first, I thought that I couldn’t taste the zucchini bread flavor, but it definitely started to come through! I feel a Green Smoothie recipe roundup coming in the near future- any suggestions before I start gathering them up?
