Banana Oatmeal Protein Pancakes [Quickie Recipe Post]

What’s a better Sunday morning breakfast than pancakes? Protein pancakes, of course! Especially when making them takes less time than trying to figure out how to open the pancake mix box:) Forget the refined flour, drop the load of egg yolks, and ditch the sugar in normal pancakes and you end up with these dense and nutrient packed flapjacks.

Banana Oatmeal Protein Pancakes

(Recipe makes 1 Pancake)

Ingredients:

2 egg whites

1/4 c. rolled oats

1/4 ripe banana

1 T. almondmilk

1/2 scoop protein powder

1 T. flaxseed

1/2 packet Stevia or 1/2 T. of agave

1/2 tsp. vanilla extract

dash of cinnamon

Directions:

Combine all ingredients in a blender or food processor and blend until the mixture just forms a thick paste. Pour batter onto an oiled griddle or pan on medium/high heat and cook for 3 minutes. Flip halfway through cooking.

Top with whatever your little heart desires- I suggest PB and agave- and enjoy!:)

  1. I love banana pancakes! These look wonderful. I like to top mine with “melted” fruit. I just microwave berries for 20-30 secs (until they are juicy and hot), mash them a bit with a fork, and pour over my ‘cakes.

    • Mmm that sounds amazing! So much healthier than syrup, too! I topped mine with greek yogurt the other day, which I loved as well. Thanks for the idea!
