Carmelized Banana Baked Oats (Recipe Quickie!)

I think it’s funny that most people consider oats “plain”. I used to be guilty of this, that is, until I learned what you can do with them! Now I make Overnight Oats, Crock Pot Oats, Oatmeal Muffins, Oat Shakes, Oatmeal Pancakes, Waffles, and new to the crowd…Baked Oats 🙂 These are a mix between an oat bar and oatmeal- chewy on the outside and soft inside. Naturally delicious and sweetened with banana, this breakfast make you eat you words the next time you go to say “Oats again?”

Carmelized Banana Baked Oats:

Ingredients:

1/2 c. rolled oats

1 banana

1/4 c. berries

1 tsp. cinnamon

1 T. flax or chia seed

1 tsp. vanilla extract

1/2 tsp. baking powder

1/2 c. almondmilk

1 T. Honey (optional)

Directions:

Preheat oven to 350 degrees. In a bowl, mix together all ingredients except for the banana. Cut the banana in half, mash one half with a fork, and cut the other half in slices. Stir mashed banana into mixture, and pour mixture into an oven safe bowl. Top with banana slices. Bake at 350 for 30-35 minutes. Let vool and enjoy with more almondilk poured over the top 🙂
