Curried Tofu Salad (Recipe Quickie!)

I would never go back to the way I used to eat, and I don’t miss the processed, sugar-laden diet that used to belong to me a bit. But occasionally, I do miss some of the foods that use to make up my Twizzler based food pyramid. Like Nutella. And ice cream every night. And chicken salad.

What to do? Make a healthy version, of course! Introducing Curried Tofu Salad- sweet, salty, and full of cumin and other smoky spices. Now you can have your “chicken salad”, and eat it too!

Curried Tofu Salad

Ingredients:

1/2 package tofu

1 beet, diced

1 T. mustard

1.5 T. Braggs

1 T. garam masala

1/2 tsp extra cumin

1 T. apple cider vinegar (other vinegars will work)

Diced pepper, raisins, and diced celery (optional)

Handful of sliced almonds

Directions: 

Mix Bragg’s, spices, mustard, and vinegar together. Mix all other ingredients in a bowl, and pour the vinegar mixture over everything. Stir with a fork until tofu crumbles, and let sit covered in the fridge for an hour.

Use it as a sandwich filling, or as a entrée, like I did! Either way, it’s incredible!
