Chia Porridge- The Most Versatile Breakfast Out There!

Serving breakfast to health food friends is one of the most difficult tasks out there. If you have vegetarian and vegan friends, a big pot of oatmeal is sure to please. But once Paul the paleo guy knocks on the door, things get difficult. And when Rebecca the raw foodist arrives, you are probably feel about ready to have a breakdown! That’s when chia porridge comes in. It satisfies nearly every diet, from the plant based to the raw. Complete with soaked pumpkin seeds, this is a superpowered start to your day!

Chia Porridge (Raw, Vegan, Gluten Free)


3 T. chia seeds

1/2 T. agave or honey (optional)

1/2 banana, mashed

1 T. flaxseed

1 cup water (or almondmilk)

1/4 c. pumpkin seeds+ 1 cup water

Boosts: spirulina, bee pollen, protein powder, maca etc. (optional)


Combine all ingredients except the pumpkin seeds and their soaking water in a tupperware. Shake well, and refrigerate for at least an hour, or overnight. Combine pumpkin seeds and water in a cup and let soak overnight. In the morning, transfer to a bowl and top with drained pumpkin seeds and desired toppings. That’s it:)

I was so surprised how amazing this porridge turned out. It was thick and sweet, and definitely filled me up! I love that you can make it whatever flavor you want, too:)
