Dinner’s Ready (and soon!)

Dinner in under 15 minutes? Easier said than done! But whether you’re in pinch for time, don’t feel like cooking,  or are just one step away from settling on a balanced meal of chocolate chips, these easy dinners are sure to get the job done!

Spaghetti Squash Pasta-

Bake spaghetti squash whole at 400 degrees for an hour. Let cool for 10 minutes, scoop out seeds, and take out squash with a fork. Top with veggies, sauce, nutritional yeast, and a protein, and you are good to go!

Egg/Hummus/Avocado Sandwich-

I think this one is pretty self-explanatory:) I love serving this on an Ezekiel english muffin or half of a whole wheat bagel, and the flavor combination is heavenly!

Green  Protein Smoothies-

They aren’t just for the mornings! There is nothing more refreshing than a giant glass of greens. It’s an added bonus that they are delicious. Not choke-it-down and call it delicious, but more delicious than a milkshake!


I love, love, love wild salmon. Not just for its healthy fats and amazing taste, but for the fact that it cooks for 8-10 minutes. Just marinate in anything (I love garlic, Bragg’s, and pepper), and broil at 500 for around 10 minutes.

Hippie Bowls

I eat hundreds of these throughout the year! They are super healthy, the best for cleaning our your fridge, and require zero effort. Pick a grain or bean, add in vegetables (those beets and kale leaves are from my garden! Yay!), choose a protein (tempeh = perfection), and top it all off with a healthy sauce or dressing:) Done.

Pumped Up Oatmeal-

There is nothing wrong with oatmeal for dinner. It’s full of fiber, and topped off with creamy nut butter, makes the list of my all time favorites!

Crockpot Stews and Chilis-

I love this sweet potato chili of mine- the warm flavors are perfect for fall!

The other day, I picked up one of these CookSimple meal starters out of curiosity. The ingredients are all natural, and its adds an amazing flavor! They have tons of other varieties that I can’t wait to try out as well.

That’s it for now! I highly recommend keep staples like salmon, cooked grains, and frozen bananas on hand so that you’re never far away from an easy(and healthy!) dinner:)

  2. I really need to buy a spaghetti squash soon, I’ve always wanted to try it! And I love breakfast for dinner, especially homemade buckwheat waffles.

    • Waffles for dinner are the best! You won’t regret it- and they are so cheap! Plus, they make a ton of leftovers and soak up all the flavors of the sauce. I actually like it better than pasta:)

  8. Yum to all of those. Salmon is so good. I’ve recently been putting tinned salmon on salads. It’s heaven. I still need to try spaghetti squash though!
