There are some foods that keep me from becoming a vegan simply because I would miss them entirely too much. Case in point, I adore wild salmon, and couldn’t think of a more satisfying snack than Greek yogurt! However, I feel like I’ve been eating a bit too much dairy lately. From yogurt and Kefir to cottage cheese, I’ve decided to cut back a bit on the milk products. But that doesn’t mean sacrifice when you have healthy substitutions that are even better!

Back to the parfait….
This Vegan Blueberry Parfait is a creamy and dreamy take on my normal yogurt based Power Parfaits. A mix between banana blueberry softserve and overnight oats, this breakfasts satisfies all cravings and leaves you energized!
Vegan Blueberry Power Parfait
Oat Part: 1/3 cup regular rolled oats
2 T. steel cut oats
1 cup almondmilk
1-2 T. chia seeds
1 T. Honey or other sweetener of choice (I used Lucuma powder and a drop of Stevia)
“Yogurt” Part: 1 banana
1/2 cup frozen blueberries
1/2 tsp. vanilla extract
handful spinach (optional)
Directions: Combine all oat ingredients in a tupperware and refrigerate overnight. In the morning, process your “yogurt” ingredients in a food processor until smooth. Layer with oats for one fancy parfait:)
This is the perfect thing to wake up to, especially since it’s already halfway made in the morning!
