MGN’s Go-To Breakfast Ideas

Having to leave for school at 6:25, I’m lucky if I end up with matching socks on, much less with a fancy breakfast! However, I always try to make the time to throw together something filling and healthy, since nobody likes being hungry at school. Whether it be a big green smoothie or a 5 minute protein pancake, here are some of my quick and easy go-to ideas!

1.) Healthy cereal. Original, right? 😉 But really, it’s always been a favorite and you can’t beat the convenience. I amp mine up with fresh fruit and chia seeds.


2.) Oats+nut butter+mini smoothie. This combo is always a winner, and keeps me full for hours.



3. Egg Sandwich on an English Muffin. Love, love, love this combo! My toppings are almost always 1 egg+1 egg white, 1/4 avocado, and hummus. This one has kabocha squash on it because I had leftover kabocha that needed to be used up- yum!


…or just egg avocado toast!


4.) Yogurt bowls are easy and protein-packed, never without granola 🙂

5.) Already halfway made by the morning, my power parfaits are great especially when you have to wait a long time until lunch.

6.) Muffins? Yes please! These are super easy to pack in the morning


7.) 5 minute protein pancakes are common occurrences around here!


8.) And the good old bar? Not a bad choice either 🙂


After writing that post, I’m definitely making breakfast for dinner 😉

MGN’s Snack Obsession: Power Muffins

Finally, after many failed experiments including one almost-set-off smoke alarm and lots of hard-as-a-rock muffins, I finally mastered the healthy muffin.

No refined sugar. Gluten Free. Full of protein and fiber. And tastes like cake!

Really, these exceeded my expectations and turned out amazing!  I love packing them as snacks, and they are even better for dessert. That is, if they last the day-My family loves them, too! 😉


The flour I used in these was Arrowhead Mills Oat Flour, which is actually pretty inexpensive. You can get certified gluten free oat flour, or just blend up rolled oats yourself and scoop out a cup of oat flour.

Ingredients: (makes 3 really big muffins)


1.5 large extra ripe bananas

1 egg+1 egg white

1/4 cup almondmilk


1 cup oat flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 sc. chocolate protein powder (optional)


Raisins, chocolate chips, chia seeds, almonds, berries, etc.

Directions: Preheat oven to 375. In a bowl, mash banana with a fork and then add eggs and almondmilk. In another bowl, whisk dry ingredients. Slowly combine dry ingredients to wet ingredients, add a bit more almondmilk is necessary. Oil a pan lightly and fill each muffin space up about 3/4 the way. Bake for about 20 minutes, checking halfway through.

I always throw in a few chocolate chips- yum!


These are great with fresh fruit for breakfast…


…or warm almondmilk with honey for dessert.


They just like the giant muffins I used to have growing up, only a whole lot healthier:)

Sunday is for [Fully Loaded] Sweet Potatoes

Hope you all are having a great weekend!

I have to share with you dinner from last night and my new favorite thing to do with sweet potatoes. Here it is in all its glory 😉


Fully loaded sweet potatoes that are as filling and delicious as they are healthy!


I baked a sweet potato for an hour and 10 minutes about on 400, then took it out and let it cool.

 I mixed together in a bowl:

-Some cooked organic chicken breast

-1/4 avocado


-handful frozen organic corn

-salt, pepper, and spices

(Pretty random, but everything worked so well together!)

Then I baked up the mixture on 350 for 15 min until everything was warm. Finally, I cut the potato down the middle vertically and filled it full of this goodness.


Done, done, and done.



This is definitely going to be a common occurence around here from now on! 🙂

Savory Breakfast

Hi there!

Today is a very special day. You all know my love for Fridays!

Yesterday started out with one really good breakfast. I saw this savory breakfast over at Kaity’s Cooking, and knew I had to try this combo. 1 egg over easy, sweet potato, kale sautéed in olive oil and Bragg’s, and half a whole wheat English muffin. Promptly covered in hummus.


I started getting hungry right before lunch, so I snacked on this NOW Bar that I won in Danica’s Giveaway a while back. Has anyone heard of these? They taste exactly like Fig Newtons. By the way, I’m starting to think Zazu’s color makes for a great background 😉


Lunch of the usual- I don’t even know why I need a picture anymore! Brown Rice Tortilla filled with chicken, hummus, avocado, and plenty of vegetables. Yep, with a bite out of it haha.


When I stopped at home I had a quick bowl of yogurt, which I put in the freezer for about a half hour- love froyo! Sorry for the repeat picture, but I promise it looked exactly like this:

I kept it simple with a dinner of baked chicken, sweet potatoes sprinkled with as much homemade cashew butter as I could manage to get out of the very bottom of the jar (need to make more!), broccoli sautéed in olive oil, and hummus. Easy and delicious.


And a homemade mini muffin with blackberries happened while watching American Idol. Yum!

Cosmetic Love!

No food? Am I at the right blog?

Yep! I just wanted to do something a little bit different today and feature my cosmetic loving side 😉

It might look small, but this bag is like the bag from Mary Poppins. Bet you wouldn’t guess there’s a whole coconut oil in there!


So what exactly is in my makeup bag?

Let’s start with the brushes- I’m a fanatic about them! Investing in a few good brushes is so worth it in the long run.

makeupbrushesI’m also known t hoard chapsticks. The only problem is that I literally can’t keep track of them. They end up in the dryer, left at school, in Lego’s stall- the list goes on and on. Anyone else have that problem? I have managed to hold on to this Zumbo Kiss and WF Tangerine that I got as gifts, though! 😉


My favorite mascaras are Physician’s Formula and Blinc. Blinc is awesome for the summer because it does not come off for anything! The only way to remove it is under running water, where it slides off in tubes. Pretty cool, right? And earthy eyeshadows are always in the bottomless pit somewhere.


Most days, I don’t wear mascara or eyeshadow, but I generally always put on this Physician’s Formula foundation, powder, and light blush. The foundation is SPF 50- gotta love that!


And 3 essentials I can’t go without? Coconut oil for hair, makeup remover, etc., Tom’s deodorant, and Burt’s Bees Hand Cream.

WIAW-Carmelized Bananas!

Hi there! I almost forgot about today’s WIAW since we had President’s Day off and I kept thinking it was Monday all day yesterday! So technically, this post features Monday’s eats:)

Starting with Crockpot Oats, cashew butter, and the very last lonely slice (sadness) of my carmelized bananas. All I did was took 2 bananas and sliced them, rolled them in 1 T. sugar (I used coconut sugar but any kind works), heated a pan over medium heat, and cooked the slices for about 2 minutes each side. Just make sure they don’t burn- we tend to have enough of that in my house 😉


Then I filled up my Camelbak before going  to do barn chores and riding…


I also brought along  a homemade protein mini muffin (yum!) and a banana as snacks.


We stopped into such an amazing Mediterranean place for lunch since we were at the barn longer than we thought. I got the combo plate, which included dolmas, falafel, tabouli, hummus, and Greek Salad.


Before dinner, I snuck a few of these Kale Krunch chips. Their price tag is heavy, but I draw out my willpower and make them last for a week. Pretty impressive 😉


The before-mentioned dinner was chicken vegetable stir fry:



A few hours later, after making it through a mountain of AP History homework, I had these salted chocolate pumpkin seeds. I need to start making my own- so good! I spy a puppy in the background.


Product loving? Our fridge was practically down to peas and ketchup after skipping a shopping trip, so we went grocery shopping Monday. We got the staples (oatmeal, etc.), and I also picked up a few fun things like a few bars, kabocha squash, cashew butter, and coconut water powder. All for under $10, which was a nice surprise.

VitaTops Review and Giveaway!!

There were two breakfasts that I always had at least a few times a week growing up-

1.) White rice with honey and creamer

2.) Muffins with honey and milk

I still love both of these childhood breakfasts often, but majority of the time I just sub in healthier alternatives! In example, white rice becomes brown rice or quinoa, creamer is replaced with milk or almondmilk, and sugary muffins are swapped out for homemade ones or healthier brands like for instance VitaLicious.

So when VitaLicious recently asked if I wanted to review their new Carrot Cake VitaTops, I didn’t hesitate to say yes:) What is Vitalicious? Let’s start with the benefits:


High fiber and protein? 15 vitamins? Pretty impressive for a muffin top, right? (That sounded weird). Anyways, I  nearly didn’t get to try them, since Zazu was out in the yard when the box came in! I found him attempting to chew it up and rescued it just in time:)


The first one I plain and loved it! They were super soft and tasted just like carrot cake complete with raisins and a cinnamon-y flavor.


They were also really good-sized for 100 calories!


For school last week, I packed them frozen into lunches and let them thaw. They are actually pretty filling with their 9 grams of fiber, so I ended up having this one after school- so good!


I also loved them like this.

2.) Spread with good quality cream cheese


And I couldn’t end this review without crumbling them over yogurt! What don’t I put into yogurt? 😉

I don’t think these would replace whole foods such as almonds, etc. in my daily diet,  but as an  occasional dessert or muffin alternative? Yes please!

Weekend Snapshots

Hi there!

This weekend was amazing. I vote for installing a day in between Saturday and Sunday, though;)

Here’s just a few weekend highlights!

Blueberry Cocoa Smoothie Bowl:

1 frozen banana, 1 c. almondmilk, 1 T. flax, 1/2 c. frozen blueberries, 1/2 sc. Vega chocolate protein powder, handful spinach. So easy, so good!

Getting to show the ponies this weekend and having all the practice pay off! They always make me smile.

Hummus. Lots of hummus. Paired with the rest of the Way Better chips.


Watching Zazu stare at himself in the mirror! Such a ham.


Roasting brussels with olive oil, salt, pepper, and 21-Seasoning Salute. Yum! I used to hate them, but it really is all about how they are prepared.


An amazing dinner from Greens & Proteins. Love love love that place. Salmon, steamed kale, white beans, balsamic reduction, and half of a Green Shake.


Trying Justin’s Chocolate Hazelnut Butter for the first time. I could do serious damage on the jar (hence, I bought a packet haha)


Having the ginormous coconut oil that I won in Maria’s giveaway arrive! Now I just have to think of something to do with it…suggestions?

Curried Quinoa Stuffed Acorn Squash!

The best dinner this week? Acorn squashes filled with a curried quinoa stuffing and topped off with raisins and salty pistachios. Fancy schmancy, right?


It’s no secret that I’m an acorn squash fanatic. I like it in pastas, love it in soups, and for goodness sake, I even used it as a granola bowl once!

But this recipe has to be my new favorite. The curry flavors go so well with the sweet squash, and the avocado makes it have a great texture. (I’ve decided that avocado is my best friend for cooking!) Here’s what to do:)


2-3 acorn squash

1 cup dry quinoa

1 sweet onion

2 cloves garlic

1/3 cup raisins

1/4 cup pistachios, salted

1/2 avocado

1 T. curry spice

Salt and pepper to taste

Preheat oven to 400. Start with 2 or 3 acorn squash and cut each one in half, then clean out the seeds. Sprinkle a bit of salt over each one.


Lay them in a baking dish that has just about a half-inch of water to keep them moist while in the oven. Bake them until soft for about an hour to an hour and 20 minutes.


Then, make your filling! Cook quinoa according to package. While quinoa is simmering, heat a tablespoon of healthy oil in a pan over medium high heat. Dice your onion and garlic and add it to the pan, the saute until onion turns into a carmelized color (about 10 minutes). Add in your curry spice, a pinch of salt, and whatever random veggies you want. I threw in peas because I add peas to literally everything:)


Mix half of the raisins and pistachios into the mix, and set the rest aside for topping. Pistachios are my new favorite nut, although I think I say that for every kind!


Then,  mash in the half avocado. Remove your squash from the oven once they are done, and add in your filling, and return them to the oven for another 10 minutes.

And that’s it! It’s not easy like mac n’ cheese, but it’s definitely not too hard:) If you want a little extra protein, feel free to add some chicken sausage. I used Chicken Apple for the family, and they all loved it!


When I get my southern, mashed-potato-and-steak-loving uncle to eat 2 portions, I know it’s a success:)

MGN Behind the Scenes

What happens around my blog that doesn’t get published?

To start, behind the scenes there’s the embarrassing mountain of granola bars that seem to be growing into a collection. Is this normal?


Behind the scenes, there’s always these guys. They somehow grow and multiply, and before I know it there’s the infamous dish mountain!


Behind the scenes, we have plenty of fun during photo shoots. Zazu thinks he should be included. I do not. But occasionally, I let him play along like in this picture- look at that face!


And hummus by the container spoonful? That happens quite a bit around here too:)


Behind the scenes, there’s my growing magazine collection that’s making my room look like that Hoarders show. I must have 50 cooking magazines in there!


And we can’t forget the time I almost burned the house down with a pot of beans…yep.

Finally, there’s the behind the scenes recipe flops. This banana nut muffin might look good, but even Zazu didn’t want it! Haha


But there’s always good eats and good times:)
