WIAW- Buckwheat Banana Pancakes!

This WIAW is all about…

Buckwheat flour. Gluten-free, full of fiber and protein, bakes easily in everything. Where has this been all my life?!

It’s my new favorite food find, and I’ve been eating it in everything from decadent yet super easy pancakes…

I was surprised at how inexpensive it is, too! You can pick it up at Whole Foods, or you can buy a good-sized bag online for $4.29 at Swanson Vitamins here. I always end up wanting to buy everything in Swanson, so I have to bring out my self-control whenever I go on that site! 😉

Back to the pancakes. These are just like my oat flour ones, but the buckwheat makes them more hearty and dense. I loved, loved, loved how much staying-power just one of these had!

The recipe is really, really easy.

Ingredients:

Wet:

1 ripe banana

1 /4 cup almondmilk

1 egg+1 egg white

Dry:

1/2 c. buckwheat flour

1 T. or so of a good-tasting protein powder (optional)

1/2 tsp. baking powder

1/2 tsp. baking soda

Directions:

You take your dry ingredients and mix them in a bowl:

 Take your wet ingredients and mix them in a separate bowl:

Then gradually stir the dry into the wet, mixing until smooth. Heat a pan on medium high with a smidge of olive oil and pour the batter in!Simple as that. This recipe makes two small/medium pancakes, but I decided to just make one really big one 🙂

Topped with maple almond butter, cashew butter, banana, and Greek yogurt? Yep, I’m sold 🙂

MGN’s (Healthy!) Strawberry Santas

Christmas is easily my favorite holiday. Not just because of the presents, the snow, and the much appreciated winter break. I love Christmas because it’s the one day of the year when, no matter what is going on in your life, you are appreciative. Surrounded by friends and family, I look around at all my blessings every Christmas morning, and I am thankful.

But, of course, I also love December 25th for all of the Christmas cheer! Lights, gifts, and amazing holiday dinners are always something everyone looks forward to. Add a guy in a red suit who brings you any present you ask for and you have one great holiday! Last night, I went to the first of many Christmas parties to come, and brought along these guys. Made with a sweet but healthy Greek yogurt filling, they are perfect for the season, and are just adorable! I was worried that nobody would eat them due to their healthiness, but at dessert, everyone gravitated toward them, and they were gone in a flash! So this year, I’m leaving the usual cookies and cake at home, and I’m opting for more healthy treats. If you build it, they will come:)

MGN’s Healthy Strawberry Santas

Ingredients:

1 large case strawberries (About 30)

1 large (around 32oz) container of plain Greek yogurt (The thicker the better-I use Fage)

1/3-1/2 c. honey

1 small package whole flaxseeds

1 piping bag with piping tip

Directions:

Wash berries. Slice tips off, big enough for a hat. With a small knife, hollow out a bit of each berry, leaving just enough room for a big dollop of yogurt. Mix honey and yogurt in a bowl and spoon into piping bag (This was the hardest part!). Fill each center with a big dollop, then place hats on top. Add a small yogurt cap on top of the hats. Carefully place your flaxseeds on the center of the yogurt to look like eyes.
