This Week’s Favorites!

If you’ve been reading my blog for a while, you know I have plenty of favorites. Hummus, almond butter, green smoothies-you name it. Here are my current faves!

1.) Living Intentions Mango Goji Fire. This is the best trail mix I have ever had, and trust me, I’ve had my every single kind my fair share of trail mixes! It’s spicy and sweet, it’s sprouted, and it has rockin’ stats.

This mix is bursting with superfoods, and gets a touch of heat from Habanero. There’s also mangos, currants, raisins, pepitas, almonds, and lots more in the mix.


I packed mine up into to-go baggies for easy snacking. Really, you have to find this- they sell it in the raw bulk bins at Whole Foods, as well as by the bag!


2.) Chicken. Sometimes I don’t want to touch it, other times I can’t get enough. The classic flexitarian. I actually baked these organic chicken breasts up with ketchup on top, which gave them a nice crunch.


3.) Simple green salads. You can’t beat a classic salad, especially with avocado and a nice oil/vinegar/salt/pepper dressing. So healthy, too!


4.) Frozen Bananas. I know it’s March and all, but my sister and I have been loving frozen bananas. Can you tell by our stash? 😉 I’m thinking about rolling them in dark chocolate and nuts next time.

 Sun-dried Tomato and Cornmeal Biscuits from Sarah over at Ingredients of a Fit Chick. This girl knows how to bake 🙂


Eggplant Parm Sandwiches from Kelly of Hidden Fruits and Veggies. This recipe is lightened up using nutritional yeast, mozz, and a homemade spaghetti sauce- yum!


Cinnamon Almond Flour Coconut Bites from Jodye, who runs Chocolate and Choufleur. Easy and healthy!


If that doesn’t make you hungry, I don’t know what will 😉

Home Sweet Home

After an amazing trip and a long drive home, I’m back on the blog 🙂 We headed out of town for a horse competition, and it was a blast! Spending time with friends, family, and horses made for an awesome vacation.

I lucked out with the weather- it was up in the 70s for most of the time!


I was lucky enough to be able to show a pony named Peccy, who was glad to enjoy the nice weather as well. She isn’t mine, but I was so fortunate to be able to ride her!


It was freezing when we started driving, so my mom pulled into Starbucks for tea. That’s always a good detour 😉


Once we arrived, I got an long overdue impromptu haircut, since my hair wouldn’t fit in my helmet. We took about 3 inches off, and I was glad to have those split ends gone!


The facility had some great lunch options. I loved the salads there, and this one had chickpeas, oil/vinegar, sundried tomatoes, and avocado.


We kept it healthy at breakfast with nut butter/banana on instant oats, which are the best invention ever for traveling.


I may have had all those healthy eats, but I didn’t miss out on the chocolate gelato either 🙂


We got home around midnight, and I walked into my sister’s room to find this sleepy puppy:


He didn’t even wake up- I thought he was going to be a least a little excited to see me!;)

And here’s a little sneak peek for tomorrow’s post. This morning, I made Buckwheat Banana Pancakes, which were as decadent as they were filling. I can do serious pancake damage, but ended up splitting this with my sister.


Yep, I’ll probably be making them everyday for the next few weeks 😉 Have a great day!

WIAW- Short and Sweet

Hi there!

It’s WIAW again- always fun! This WIAW is going to be short and sweet, because my internet connection is being slower than molasses and Zazu keeps asking to go outside every 5 seconds haha.  Let’s get right to it 😉

Breakfast of banafied oats with chocolate pumpkin seeds, and carrot/cucumber/apple/lemon juice. Classic combo!

Snack of a mini power muffin from my new favorite recipe. I have to keep making batches of these because they go fast in my family!


My ever so predictable lunch of a wrap, Way Better chips, and an apple. #nevergetsold


After school snack of Stonyfield Greek plain with cocoa powder and raw supergreen granola. The granola might look odd, but it just tastes like coconut and is so good!


Then it was off to do barn chores. Buddy did his first jumping show this week and was such a good pony! I’m so blessed to have them in my life.


A loaded sweet potato with a probably too many spoonfuls of hummus became dinner- my new favorite! (Apologies for the picture repeat)


Dessert and product loving are all wrapped up in one! My mom went on a quick errand to CVS for a few things, and returned home with this! My first time ever trying Justin’s Maple Almond Butter did not disappoint, especially paired with banana. It’s really just a big jar of bliss.


And Zazu even got a tiny taste 😉

Weekend Snapshots

Hi there!

This weekend was amazing. I vote for installing a day in between Saturday and Sunday, though;)

Here’s just a few weekend highlights!

Blueberry Cocoa Smoothie Bowl:

1 frozen banana, 1 c. almondmilk, 1 T. flax, 1/2 c. frozen blueberries, 1/2 sc. Vega chocolate protein powder, handful spinach. So easy, so good!

Getting to show the ponies this weekend and having all the practice pay off! They always make me smile.

Hummus. Lots of hummus. Paired with the rest of the Way Better chips.


Watching Zazu stare at himself in the mirror! Such a ham.


Roasting brussels with olive oil, salt, pepper, and 21-Seasoning Salute. Yum! I used to hate them, but it really is all about how they are prepared.


An amazing dinner from Greens & Proteins. Love love love that place. Salmon, steamed kale, white beans, balsamic reduction, and half of a Green Shake.


Trying Justin’s Chocolate Hazelnut Butter for the first time. I could do serious damage on the jar (hence, I bought a packet haha)


Having the ginormous coconut oil that I won in Maria’s giveaway arrive! Now I just have to think of something to do with it…suggestions?

MGN Behind the Scenes

What happens around my blog that doesn’t get published?

To start, behind the scenes there’s the embarrassing mountain of granola bars that seem to be growing into a collection. Is this normal?


Behind the scenes, there’s always these guys. They somehow grow and multiply, and before I know it there’s the infamous dish mountain!


Behind the scenes, we have plenty of fun during photo shoots. Zazu thinks he should be included. I do not. But occasionally, I let him play along like in this picture- look at that face!


And hummus by the container spoonful? That happens quite a bit around here too:)


Behind the scenes, there’s my growing magazine collection that’s making my room look like that Hoarders show. I must have 50 cooking magazines in there!


And we can’t forget the time I almost burned the house down with a pot of beans…yep.

Finally, there’s the behind the scenes recipe flops. This banana nut muffin might look good, but even Zazu didn’t want it! Haha


But there’s always good eats and good times:)

Makin’ Banana Pancakes

Happy Valentine’s Day!!

“Makin’ banana pancakes, pretend like it’s the weekend, yeah”.  Who else loves Jack Johnson?:)

My Valentine’s Day started with that song and of course a big batch of banana pancakes…


As I proclaimed in my WIAW post yesterday, I am finally on the protein pancake bandwagon! I love how simple and healthy these are, plus the fact that they take about 5 minutes to make. And with about 15 grams of protein, they easily hold me over until lunch.

Oh, and did I mention they taste like cake?? Sign me up:)

Here’s how to achieve this goodness:

1.) Start with the base.


In a bowl, mash 1 ripe banana with 2 T. protein powder (1 T. cocoa powder works as well), 1/2 tsp. baking powder, 1 egg, and 1/3 cup oat flour.  Heat a pan over medium high heat with a light coating of oil. Stir until smooth, then pour into pan.


Let the pancakes cook for about 90 seconds on each side, allowing more time if necessary.

Now for the fun part…top your pancakes with any toppings you desire:)

Greek yogurt, agave nectar, and crushed walnuts? Yum!


Or how about blueberry Greek yogurt and cashew butter?



This was my first attempt- they tasted great but I’ve definitely improved my flipping skills since:)


And because these are quite addicting…

A Great Start to the Week

Happy Tuesday!

Yesterday I had my hands full with Zazu… I caught him burying his bones in my garden beds- look at that guilty face!

Speaking of dogs, have any of you heard of the Text from Dog Tumblr? Some of them are pretty funny- I like this one:)



After laughing at that, I had breakfast which was Crockpot Oats with cinnamon (the best), almond butter, and a green smoothie.


I packed some energy squares to hold me over until lunch, then threw together a sandwich that is my current obsession. This lunch is filling, so healthy, and really easy! Here’s a little tutorial:)





I put leftover sweet potato on it the other day and it was amazing! It sounds weird, but it’s my new favorite sandwich topping. I also packed an orange and crackers alongside! The crackers were Lydia’s Organics- go enter my giveaway here!


After school I took care of the ponies. I was lucky enough to get to see my old pony recently, too! I got him when I was 7 and now he is retired and is owned by a 4-year-old girl. He may be 28, but he thinks he is 2:) I couldn’t ask for a better home for him and am so lucky to have him in such a great place.


Dinner included this Bob’s Red Mill Cornbread. This mix is dangerous-it’s ridiculously good!


I crumbled a little over a butternut blackbean crockpot chili and ate a million  another few little squares alongside. Monday dinners are always so good because I spend a few minutes on Sunday night putting something together in the crockpot, then just plug it in on Monday morning.


After which I did my homework, read some awesome blogs like Bite-Sized Thoughts, Abby Eats Almonds, Running with Spoons, and Clean Eating Veggie Girl, broke into my TJ’s chocolate stash, watched a few minutes of random shows while painting my nails (this multi-tasking didn’t work so well haha), and fell asleep. Loved this relaxing day.

It’s the Little Things in Life

First of all, Happy Friday!

Here’s a few things I’ve been happy about this week!

Happy is waking up to this face. Even if he stole another pair of socks.


Happy is making dinner for the family. On the menu: Sea salt and herb crusted salmon, quinoa, beets, and avocado collard wraps (which are way better than they sound!)


Happy is making a sweet potato carrot ginger soup that comes out completely gross, then adding half an avocado and a pinch of salt and turning it into a bowl of amazing.


Happy is when someone generously buys you a ridiculous amount of hummus 🙂 I haven’t tried any of these flavors, either-yum!


Happy is reading the Bible.


Happy is not having to set my alarm for 5:30. Weekends, I love you.


Happy is finding “Boo”, who has the title of the cutest dog in America! If that doesn’t make you smile, I don’t know what will<3

Current Obsessions and Shopping Trader Joe’s Style!

Like all little kids, I used to go through phases where I would be obsessed with something for a month or so before I moved on to the next thing. One month, it might have been Ovaltine, the next it was model horses, and then it was spoonfuls of Nutella. Nowadays, my phases are a little healthier and  a little longer (I don’t think I could ever get tired of hummus!). Here’s what I’ve been loving lately:)

1.) Beets, like in this butternut beet salad. Yum!

2.) My Avocado Dressing! I made it with lemon instead of lime last night, and it was just as good. Zazu is such a bad table surfer! You would think he was starved haha


3.) Cashew Butter– I made this the other day and it turned out great, even if my food processor overheated and shut off! I’ve been putting it on everything from oatmeal to sweet potatoes.


4.) And last but not least, Hummus/Chicken/Veggie Sandwiches! Tired of them yet? Good, because either am I:)


To fuel all this, we went for a quick shopping at TJ’s this weekend. Here’s some of the loot we picked up:)

Spinach, oranges, apples, avocados, carrots, lemons


PB, almond butter, cashews for nut butter, sprouted bread


Quinoa and Chicken Breasts

Instant oatmeal for an upcoming trip and eggs


Flaxseed meal, brushetta, and tapenade. Sorry for the random grouping! I feel like we are playing “Which one doesn’t belong?” Haha

Whole Foods Finds!

Our fridge was getting down to condiments and almondmilk after skipping a grocery shopping trip, so last night on our way home we stopped by Whole Foods to pick up a few staples! Going there is always a treat:)

Zazu was especially happy that we went…he is an olympic athlete when it comes to destroying Whole Foods and Trader Joe’s bags!


He calls it recycling. I call it making a mess.


We got staples along with a few new finds!

Produce: Apples, tangerines, avocados, carrots, beets, greens, onions, etc.

Carrot close up! These are so pretty, and I definitely want to try to grow them this year.


Bulk Bin: Dried apples, Carob energy squares, Rip’s Big Bowl Cereal for yogurt


Prepared Food: Orzo, Sweet Potato Latkes, and Curried Chicken Salad, unpictured salad:)


Dairy: Wallaby Greek- the BEST yogurt ever


Random: Sweet potatos, ACV, tomatoes


We also picked up almond milk, chicken, burgers, drinks and a plenty of other things and our bill was less than $80-I was really surprised at the checkout! Maybe we should stop calling it Whole Paycheck haha.

With all the produce we have now, I’m looking forward to making some veggie-filled dinners coming up:) Let me know your suggestions!
